This was definitely a Cabernet vintage - the blend comprises of 97% Cabernet Sauvignon, 2% Merlot and 1% Petit Verdot. As always, the grapes were picked by hand and the fruit was sorted on our state-of-the-art sorting line, de-stemmed and gently crushed. The wine spent 25 days on skins to develop structure, a silky texture yet retain its freshness, brightness and lift. It was then aged in French oak (35% new) for 14 months.
